Combine all ingredients except the lemon juice in a blender.
Use fresh herbs:
The brighter and fresher the herbs, the better the chutney.
For heat:
Add 1-2 green chilies while blending if you prefer a spicy kick.
You will likely need to add some water to help the blender run smoothly. Add just enough to get things moving (around 1/4 cup for this recipe).
Don’t add too much water:
Add water gradually. The chutney should be smooth but not runny.
Blend until smooth and creamy.
Adjust sweetness and salt:
Taste and tweak before storing.
Add the lemon juice and mix well.
Adding the lemon juice at the end helps preserve the bright green color and keeps the flavor fresh.
Transfer the chutney to a storage jar.
Storage:
Store in an airtight container in the refrigerator for up to 4–5 days. A thin layer of oil on top can help preserve color and freshness.
