Son sustanciosos, nutritivos y extremadamente vers\u00e1tiles en la cocina india. Curiosamente, yo nunca hab\u00eda o\u00eddo hablar de <em><a href=\"https:\/\/www.purecurry.com\/es\/madra-con-garbanzos\/\" type=\"post\" id=\"1748\">Chana Madra<\/a><\/em> hasta que lo vi en un programa sobre comida y cultura de la India. Result\u00f3 ser un descubrimiento maravilloso: rico, ligeramente \u00e1cido y sorprendentemente f\u00e1cil de preparar.  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Otro excelente plato de garbanzos de la cocina del norte de la India es <em>Pindi Chana<\/em>, una preparaci\u00f3n llena de sabor que proviene de la ciudad de Rawalpindi, en el actual Pakist\u00e1n. A diferencia del <em><a href=\"https:\/\/www.purecurry.com\/es\/chana-masala-garbanzos\/\" type=\"post\" id=\"26\">Chana Masala<\/a><\/em>, que tiene m\u00e1s salsa, <em>Pindi Chana<\/em> es un plato m\u00e1s seco, con especias intensas y un sabor profundo y terroso. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si comienzas con garbanzos enlatados, este plato puede prepararse r\u00e1pidamente. El t\u00e9 no hace que el plato sepa a t\u00e9; m\u00e1s bien, le da a los garbanzos un hermoso color oscuro y a\u00f1ade una sutil profundidad ahumada. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Otra caracter\u00edstica de este plato es su sabor \u00e1cido. Muchas de mis recetas usan <em>amchur <\/em>(polvo de mango seco) para aportar acidez, pero <em>Pindi Chana<\/em> suele incluir <em>anardana <\/em>(polvo de semillas de granada seca), un ingrediente muy utilizado en la cocina punjab\u00ed. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ambos ingredientes funcionan muy bien, y puedes usar uno u otro \u2014o incluso ambos\u2014 seg\u00fan tu preferencia.<\/p>\n\n\n\n<div class=\"wp-block-group has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Sugerencias para Servir<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Pindi Chana<\/em> se sirve mejor caliente, adornado con jengibre cortado en juliana y cilantro picado.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este plato combina muy bien con <em>naan<\/em>, <em>roti<\/em>, <em>paratha<\/em>, <em>bhatura <\/em>o arroz basmati al vapor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Como es una preparaci\u00f3n relativamente seca, tambi\u00e9n funciona muy bien como parte de una comida m\u00e1s amplia del norte de la India, acompa\u00f1ado de platos
