Tradicionalmente preparada en un horno tandoor de barro, este m\u00e9todo produce carnes tiernas y profundamente sazonadas con una costra caracter\u00edstica, sabores que podemos recrear en casa con la marinaci\u00f3n y el m\u00e9todo de cocci\u00f3n adecuados. <\/p>\n\n\n\n<p>La marinada tandoori es la base de muchos platos cl\u00e1sicos de la cocina mogol. En casa, lo replicamos de la siguiente manera: <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Precalentando bien el horno.<\/li>\n\n\n\n<li>Asando a temperatura alta (hasta 260 \u00b0C \/ 500 \u00b0F).<\/li>\n\n\n\n<li>Colocando la prote\u00edna sobre una rejilla para que circule el aire.<\/li>\n\n\n\n<li>Pincelando ligeramente con aceite o ghee antes y durante la cocci\u00f3n.<\/li>\n\n\n\n<li>Terminando bajo el asador para lograr el efecto ligeramente carbonizado.<\/li>\n<\/ul>\n\n\n\n<p>Esa exposici\u00f3n final a calor intenso es lo que crea la costra caracter\u00edstica del estilo tandoori y su ligero toque ahumado.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Sobre el color rojo<\/h2>\n\n\n\n<p>Muchos platos tandoori estilo restaurante utilizan colorante rojo para lograr un impacto visual, especialmente con prote\u00ednas blancas como el pollo o el pescado.<\/p>\n\n\n\n<p>Mi preferencia es m\u00e1s natural.<\/p>\n\n\n\n<p>En lugar de colorantes artificiales, pincelo la prote\u00edna a mitad de la cocci\u00f3n con chile rojo de Cachemira mezclado en aceite.
