Esto se hace para aromatizar el aceite antes de incorporar los dem\u00e1s ingredientes. Hay una raz\u00f3n por la que se a\u00f1aden al aceite caliente y no simplemente se echan a la salsa durante la cocci\u00f3n. Este proceso de a\u00f1adir la especia al aceite caliente a veces se llama <em>floreado <\/em>o <em>templado<\/em>. Extrae los aceites arom\u00e1ticos de la especia hacia la grasa, formando la base de sabor de la receta.    <\/p>\n\n<div class=\"wp-block-group has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">La temperatura del aceite importa<\/h2>\n\n\n\n<p><strong>Si las semillas de comino se a\u00f1aden a un aceite que a\u00fan se est\u00e1 calentando:<\/strong><\/p>\n\n\n\n<ul style=\"line-height:1.5\" class=\"wp-block-list\">\n<li>No chisporrotean,<\/li>\n\n\n\n<li>Liberan su aroma lenta e incompletamente, y<\/li>\n\n\n\n<li>Gran parte de la fragancia se pierde en el aire en lugar de infusionarse en el aceite.<\/li>\n<\/ul>\n\n\n\n<p>El resultado es un plato con un sabor m\u00e1s plano y menos arom\u00e1tico, aunque el comino est\u00e9 presente.<\/p>\n\n\n\n<p><strong>Cuando las semillas de comino entran en un aceite correctamente caliente:<\/strong><\/p>\n\n\n\n<ul style=\"line-height:1.5\" class=\"wp-block-list\">\n<li>Chisporrotean de inmediato.<\/li>\n\n\n\n<li>Se hinchan ligeramente y liberan sus aceites esenciales.<\/li>\n\n\n\n<li>El aceite se vuelve fragante en cuesti\u00f3n de segundos.<\/li>\n<\/ul>\n\n\n\n<p>Esta reacci\u00f3n r\u00e1pida hace que el sabor del comino quede atrapado en el aceite y se distribuya por todo el plato. Un dorado ligero (la reacci\u00f3n de Maillard) aporta una profundidad c\u00e1lida y ligeramente a nuez, caracter\u00edstica de muchas recetas indias. <\/p>\n<\/div>\n\n<div class=\"wp-block-group has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading\">No dejes que se quemen<\/h3>\n\n\n\n<p>Las semillas de comino se doran r\u00e1pidamente, a veces en solo unos segundos. Cuando se vuelven marr\u00f3n oscuro o negras, se tornan amargas. Para evitarlo:  <\/p>\n\n\n\n<ul style=\"line-height:1.5\" class=\"wp-block-list\">\n<li>A\u00f1ade el comino al aceite caliente,<\/li>\n\n\n\n<li>D\u00e9jalo chisporrotear brevemente, y luego<\/li>\n\n\n\n<li>A\u00f1ade de inmediato los siguientes ingredientes indicados en la receta (cebolla, verduras, legumbres, l\u00edquido, etc.). Esto baja la temperatura del aceite y detiene el dorado para que las semillas no se quemen.  <\/li>\n<\/ul>\n\n\n\n<blockquote class=\"wp-block-quote is-style-spice-line is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Una vez que las semillas de comino entran en el aceite listo, normalmente solo necesitan entre <strong>10 y 15 segundos<\/strong>. Deben oscurecerse un poco (marr\u00f3n intenso, no negro). <\/p>\n\n\n\n<p>Si accidentalmente quemas las semillas (se vuelven negras y el humo huele acre), <strong>des\u00e9chalas<\/strong>. El comino quemado es intensamente amargo y arruinar\u00e1 toda la base del plato.
