Los sabores eran ricos y a la vez ligeramente \u00e1cidos, reconfortantes pero distintivos. A pesar de la cantidad de especias que lleva la receta, es sorprendentemente f\u00e1cil de preparar.  <\/p>\n\n\n\n<p><em>Chana Madra<\/em> es un plato tradicional del estado del norte de la India de Himachal Pradesh, una regi\u00f3n monta\u00f1osa del Himalaya conocida por su cocina sustanciosa y llena de sabor. Tradicionalmente, el plato se enriquece con frutos secos como anacardos (cashews) y pasas, que aportan un toque sutil de dulzor y textura. En Himachal Pradesh tambi\u00e9n se utilizan a veces albaricoques secos, ya que son originarios de la regi\u00f3n.  <\/p>\n\n\n\n<p>El resultado es un plato maravillosamente equilibrado, con capas de especias, la cremosidad del yogur y un suave dulzor proveniente de los frutos secos.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Sobre las especias en Chana Madra<\/h2>\n\n\n\n<p>Una de las cosas que le da a <em>Chana Madra<\/em> su sabor caracter\u00edstico es la mezcla de especias enteras reci\u00e9n molidas.<\/p>\n\n\n\n<p>Esta receta incluye una variedad de especias como canela, macis (mace), cardamomo, semillas de hinojo, semillas de cilantro y semillas de comino. Cuando se muelen juntas, estas especias crean una mezcla fragante que le da al plato su aroma distintivo y una gran profundidad de sabor. <\/p>\n\n\n\n<p><strong>Nota:<\/strong> Si no tienes todas las especias indicadas en la receta, no te preocupes. El yogur a veces puede separarse cuando se expone a un calor demasiado alto o cuando se a\u00f1ade demasiado r\u00e1pido a una sart\u00e9n caliente. Afortunadamente, algunas t\u00e9cnicas sencillas ayudan a mantener la salsa suave y cremosa.<\/p>\n\n\n\n<p><strong>1. Usa yogur entero<\/strong><br>El yogur entero es mucho m\u00e1s estable al calentarse y es mucho menos probable que se corte que el yogur bajo en grasa o sin grasa.<\/p>\n\n\n\n<p><strong>2. Bate el yogur antes de a\u00f1adirlo<\/strong><br>Bate el yogur en un recipiente hasta que quede suave y cremoso. Esto ayuda a que se integre de manera m\u00e1s uniforme en el plato.<\/p>\n\n\n\n<p><strong>3. Reduce el fuego al a\u00f1adir el yogur<\/strong><br>Antes de a\u00f1adir el yogur, baja ligeramente el fuego. A\u00f1adir yogur a aceite o especias extremadamente calientes puede hacer que se separe.<\/p>\n\n\n\n<p><strong>4. Remueve continuamente<\/strong><br>Una vez que el yogur se a\u00f1ade a la sart\u00e9n, remueve continuamente durante unos minutos.
