Tradicionalmente se sirve con arroz hervido y cl\u00e1sicos del sur de la India como <em>idlis<\/em> (bollos al vapor de lentejas y arroz), <em>vadas<\/em> (rosquillas saladas fritas de lentejas) y <em>dosas<\/em> (crepas finas fermentadas).<\/p>\n\n\n\n<p>En todo el sur de la India, el <em>sambar<\/em> presenta muchas variaciones. Algunas versiones tienen un toque ligeramente dulce gracias al az\u00facar o al <em>jaggery<\/em>. Otras cambian la combinaci\u00f3n de verduras o ajustan la mezcla de especias \u2014el <em>sambar powder<\/em>\u2014 que le da al plato su aroma y profundidad inconfundibles.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\"><strong>Ingredientes que definen el <em>sambar<\/em><\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Las Lentejas<\/h3>\n\n\n\n<p>El <em>sambar<\/em> se prepara tradicionalmente con <em>toor dal<\/em> (guisantes de paloma partidos). Cuando se cocinan por completo, estas lentejas se deshacen y forman una base espesa y cremosa que le da cuerpo al guiso.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">La Mezcla de Especias<\/h3>\n\n\n\n<p>El alma del <em>sambar<\/em> proviene del <em>sambar powder<\/em>, una mezcla de especias tostadas que suele incluir chiles rojos secos, semillas de cilantro, semillas de fenogreco, granos de pimienta negra, hojas de curry, <em>asafetida<\/em> y garbanzos partidos (<em>chana dal<\/em>). Algunas mezclas regionales pueden incluir <em>urad dal<\/em>, m\u00e1s <em>toor dal<\/em> o coco.<\/p>\n\n\n\n<p><strong>CONSEJO:<\/strong> El <em>sambar powder<\/em> comprado en tiendas es pr\u00e1ctico, pero suele ser bastante picante. Prepararlo en casa te permite controlar tanto el nivel de picante como el aroma.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Las Verduras<\/h3>\n\n\n\n<p>Entre las verduras m\u00e1s comunes se encuentran la calabaza, los <em>drumsticks<\/em>, las chalotas, las cebollas, otras calabazas, las patatas, las zanahorias, la okra, la berenjena baby y las jud\u00edas de racimo. Una vez cocido, mach\u00e1calo bien para crear una base suave.<\/p>\n\n\n\n<p>Por separado, cocina las verduras en agua de tamarindo hasta que est\u00e9n justo tiernas. Deben mantener su forma y no deshacerse en el guiso.<\/p>\n\n\n\n<p>Sofr\u00ede las cebollas o chalotas hasta que est\u00e9n ligeramente doradas y luego combina todo: las lentejas, las verduras, el agua de tamarindo y el <em>sambar powder<\/em>. Remojarla durante unos 45 minutos permite que el agua atraviese la cubierta de la semilla e hidrate los gr\u00e1nulos de almid\u00f3n. Esto da lugar a una gelatinizaci\u00f3n m\u00e1s uniforme durante la cocci\u00f3n.<\/p>\n\n\n\n<p>Una vez cocida, la agitaci\u00f3n mec\u00e1nica (el machacado, tradicionalmente llamado <em>ghonta<\/em>) libera el almid\u00f3n en el l\u00edquido de cocci\u00f3n, formando una emulsi\u00f3n estable que le da al <em>sambar<\/em> su espesor caracter\u00edstico y ayuda a recubrir las verduras de manera uniforme.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Gesti\u00f3n del \u00e1cido y la pectina<\/h3>\n\n\n\n<p>El tamarindo aporta acidez, que cumple una funci\u00f3n estructural crucial. En general, los ambientes \u00e1cidos inhiben la descomposici\u00f3n de la pectina, manteniendo intactas las paredes celulares de las plantas.<\/p>\n\n\n\n<p>En el <em>sambar<\/em>, esto juega a nuestro favor. Cocinar las verduras en agua de tamarindo refuerza su estructura de pectina lo suficiente como para que se ablanden sin desintegrarse. Por eso la calabaza, las zanahorias y los <em>drumsticks<\/em> se mantienen intactos en lugar de volverse pastosos.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Desarrollo del sabor<\/h3>\n\n\n\n<p>Sofre\u00edr las cebollas o chalotas inicia la reacci\u00f3n de Maillard, creando compuestos complejos y sabrosos que forman la base del sabor del guiso.<\/p>\n\n\n\n<p>La t\u00e9cnica del <em>tadka<\/em> extrae compuestos arom\u00e1ticos solubles en grasa de las semillas de mostaza, las hojas de curry y la <em>asafetida<\/em>.
